1) Keto Broccoli and Cheddar Soup

 

Ingredients:

  • 1 head of broccoli, chopped into florets
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of shredded cheddar cheese
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • Optional: cooked bacon or diced cooked chicken for added protein

 

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the broccoli florets and continue to sauté for another 5 minutes.
  3. Pour in the chicken broth and bring the mixture to a simmer. Cook for 10-15 minutes, or until the broccoli is tender.
  4. Remove from heat and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.
  5. Stir in the heavy cream and shredded cheese. Season with salt and pepper to taste. If desired, add cooked bacon or diced cooked chicken for added protein.
  6. Serve warm and enjoy!

Ingredients:

  • 1 tbsp. olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cans diced tomatoes (14.5 oz cans)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp. dried basil
  • Salt and pepper, to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onion and garlic and cook until softened, about 3-4 minutes.

  3. Stir in the diced tomatoes, chicken broth, and dried basil.

  4. Bring the mixture to a simmer and cook for 10-15 minutes.

  5. Remove from heat and carefully blend the mixture until smooth.

  6. Stir in the heavy cream and season with salt and pepper to taste.

  7. Serve hot and enjoy!
